Spices
I love cooking with spices and trying new things. I carry many of these items as they are staples in my recipes. It is also for my fellow Taos chefs and cooks because these specialty items are hard to get if you do not live in a metropolitan area with ethnic diversion.

Garam Masala
Is a basic blend of ground spices common in North Indian and other South Asian cuisine. Garam masala is pungent, but not hot in the same way as a chili pepper.
Ras el Hanouf
Is a popular blend of spices that is used across North Africa. The name means “top of the shop” in Arabic and refers to a mixture of the best spices a seller has to offer. More flavor than heat.
Moroccan Harrisa
It is a standard ingredient of North African cuisine. It has lots of flavor and heat.
Harissa is more than merely chile-hot. Most versions include other seasonings such as caraway, coriander, garlic and mint, giving harissa a complex flavor that many hot sauces can't claim.
Xantham Gum
The chemical which acts as a natural stabilizer or thickener.
In most foods, it is used at 0.5%, and can be used in lower concentrations. Has changed the gluten free food needs drastically as used in gluten-free baking.

Star Anise
Star anise enhances the flavor of meat. It is used as a spice in preparation of biryani all over the Indian subcontinent. It is widely used in Chinese cuisine, Indian cuisine (where it is a major component of garam masala) and in Malay and Indonesian cuisine.
Five Spice
ajiao (star anise), cloves, cinnamon, huajiao (Sichuan pepper) and ground fennel seeds. Instead of true cinnamon, "Chinese cinnamon" (also known as rougui, the ground bark of the cassia tree, a close relative of true cinnamon which is often sold as cinnamon), may be used.
Whole Fennel Seed
It is a highly aromatic and flavorful herb with culinary and medicinal uses, and, along with the similar-tasting anise, is one of the primary ingredients of absinthe. Florence fennel or finocchio is a selection with a swollen, bulb-like stem base that is used as a vegetable (our artichoke & fennel fritti). In Greek mythology, Prometheus used the stalk of a fennel plant to steal fire from the gods
